It seems as though there are a lot of English people on the East Coast of Aus? Is this the same for NZ? It kind of puts me off it a bit of I'm honest...
New Zealand tends to be some 10-15% cheaper than Australia, between a better exchange rate and cheaper food/accommodation/transport. You'll earn less while working in New Zealand as well, though.
If you love hiking and nature, New Zealand is paradise; far superior to Australia (for all that I also love Australia). Also good for adventure activities. Much less good for beaches and partying. Overall the same type of culture, otherwise, but with a lot more respect and integration of Maori history/culture than Australia has with aboriginal history/culture. (Still not perfect, but better.) New Zealand feels like it runs a couple of years behind the rest of the world in IT developments, and tends to have more expensive internet e.a. Australia has the better live music scene (mostly because both Melbourne and Sydney just have the scale for it), though I actually have more favorite kiwi artists than Australian ones.
A is as easy to get as an Australian one, and for UK citizens can go straight up to 23 months, no need to do fruit picking to "earn" that second (almost) year. As a visitor (not wanting to work), you can just show up at the airport and stay for three months, no need to arrange anything in advance. (Six months even for UK citizens, I think, but you'd need to check that.)
The percentage of tourists which are English probably works out to about the same, but it's much easier to head out into quieter regions where you won't encounter anyone.

I'd choose NZ every time, but then i love the outdoors.
I met a lot more Germans than Brits when I was last there.
How highly recommended? NZ is my joint favourite out of 90 countries visited. It has the greatest variety in such a small area, is very geared up for travellers and is very rewarding for easy travel. If you're British it isn't alien, so if you're looking for a different world then I'd say try south east asia or the Orient, but if you enjoy landscapes it's the most fun possible.
As a kiwi, I would recommend NZ over Australia any day. More to see in a smaller distance, but again as the others have said it's outdoorsy and plenty of adventures. Guess it depends on what you want out of your trip, the wages aren't that great but if you get out of Auckland the cost of living is pretty decent, probably much the same as living in London with the UK wages, can't win in big cities. The exchange rate is pretty much exactly the same between Australia & NZ at the moment - I found last time we went to Oz in 2013 that prices were pretty much the same with the exchange rate.
As Sander said, working holidays are easy to get and visitors with UK passports do get 6 months (commonwealth agreement) - I think you need a visa to get into Australia even as a visitor.

I'm travelling to New Zealand in August for a little over month and am having a hard time deciding the best bus line to travel with and if I should get one of the packages that takes you around both islands or should I just book each trip as I move from city to city? Does anyone have any recommendations?
