Hey i am from NZ and trying to apply for a 2 year working holiday visa for the UK.
My question is how long does the proof of funds need to be shown in your bank statements before you go for your appointment for your application?

You must have £1,890 in savings, a bank statement showing you have at least £1,890 in savings - WHEN YOU MAKE THE APPLICATION

Yea thats what i was hoping for but i have read that some people say you need to provide a months worth (or 3 months) worth of bank statements with that total amount in it.

Was just wondering if anyone had been through the process that might be able to help out!

That link says you need to provide a statement with 1890.00 Pounds with your application.
By the time you arrive in the UK, months may have gone by & the UK immigration may want another statement then. Perhaps that is where people get the idea of 3 months worth of statements.

Anyway - I suggest you just follow what the authorities ask you for rather than second guess the rules.
