Basically i am looking to get a year long work/holiday visa my first question is when I apply for this do I have to specify when the visa will
begin from or will it just start when I hit Australian soil??
It will indeed begin when you enter Australia, which can be up to a year after the visa has been granted. (I believe the visa application process asks you when you intend to arrive in Australia, but if so, this is informational only, and you're not required to arrive on that date; both earlier and later is fine.)
What I am curious about is if me and her become very serious is there any sort of visa that will allow me to stay longer, I.e extending the visa I already have or applying for another work/holiday visa?
If you do three months of "" (fruit picking, construction, mining, etc - all in rural areas) while on your first WHV, you're eligible to apply for a second year WHV.
Alternatively you could hop out of the country to New Zealand, and while there apply for an , or while still on your WHV, you could apply for a to be able to stay in Australia for another 3 months as a tourist (you wouldn't be allowed to work then), where the tourist visa allows for extending it to six months. (But I don't know if that might be denied if they see that you just were there for a year on a WHV.)
Finally, if you have in demand skills, and/or find a company willing to sponsor you, you could apply for a , and eventually apply to become a permanent resident.
