Two part inquiry:
The wireless networks in Australia are pretty archaic compared to the US. The US and Oz operate on different bandwidths US gsm 850 and Oz 900 are the main ones. Unless your phone is compatible with the 900 bandwidth then it wont work whatever you do to it. So first check to find out if you iphone will work on the 900 bandwidth, then check to make sure its unlocked.
You can now buy a sim in Aus without needing a permanent address. Just pay your money and it's switched on in a few minutes. Rates here are outrageous compared to the US and UK.
I've stayed at a few places on the network. It's a great way to meet the locals and save money on accommodation. I havent looked in a while, but I remember there are some winery's listed on there. Also check the Melbourne area and Margaret River south of Perth. If you can get a foot in the door by helping at one of the HelpX winery's they may be more open to offering you paid work, or they may have paid work straight off. Even if you can't find a winery listed on HelpX, do some research. Find the good winnerys, then find a HelpX place close to the winery. It's a small population here and believe me if there is a winery close to a HelpX accommodation they will likely know who owns the winery. So then you drop the HelpX people a note telling them what you are looking for and ask if you can come help them in return for an introduction to the winery owners!
For HelpX to work well in your favor, you'd do good to join now and go stay with a place local to you. This gives you a positive (hopefully!) feed back and will make it more likely that someone in a foreign country feels comfortable letting you stay at their place.
