I haven't been but my friends recommended the Bagno Vignoni Terme, in the Siena area. You can have a look in the area, there are more options and chose the one that fits the best for you.
I would add Assisi on the list...it's a really beautiful place!

Hi , i suggest you also a stop near Florence is Montaione in a beautiful eco farm house called Location Pleayadi , It's a small small town in the coutry near Florence ( less than 1 hour by car) but really Beautiful.
Also Terme di Rapolano are greate in october and are really near from Siena!
