It does not sound like you plan much time in Hong Kong but this might help if you are there for even a day.
It is a great resource for all things Hong Kong, A labour of love by whoever owns the site.
Personally, I get an Octopus card at the airport. Good value & very convenient

I currently live in Shenzhen (right next to Hong Kong).
Things you need to know - the airport is about an hour ride to the border. There are direct buses. Or mini-vans - if you choose a mini - van it will cost about 150rmb. Usua;;y takes you through the first check point (leaving Hong Kong) and onto the Entrance checkpoint (for mainland) this is where it will drop you. Go straight through, once you have cleared the checkpoint - head outside the building - there are many 2 toned taxi's - red and another colours. They will take you where you need to go.
If you are travelling to Shanghai there's a direct train that goes there from Shenzhen North station - takes about 11 hours. Remember to book a seat on trains - they get over crowded quickly and easily. There's lots of stops you could make as part of your journey - such as Xiamen - coastal city - very nice place lots of history. If you make it to Shanghai - consider going north (extra 45 mins) to Nanjing - beautiful town - and they have a war museum dedicated to the people who died from the Japanese invasion. Like Thailand it can be difficult to get around China, but it's a very special place.
