Don't take traveller's cheques. They are utterly useless outside the USA. In the off-chance that you find a place to exchange them into cash you'll pay such a hefty fee it will make you cry. If you do take traveller's cheques think of them as "emergency money", intended to be taken along but not intended for actual use.
Travelers cheques are a waste of time in France - very few stores will accept them and most banks refuse them - there are ATM machines everywhere and you usually get a better rate of exchange with a card - make sure you tell your card suppliers that you are traveling. and that you have a record of how to cancel them - there are good online secure places you can register all this confidential information

I agree with the other posters. Do not use traveller cheques in Europe, a lot of hotels and so on do not except them. Use cash or your credit card.
I would take a little bit of of cash and than use your credit card.
I would particularly avoid Thomas Cook US traveller's cheques. Not only were they impossible to cash abroad but I can't cash them back in the UK except at Thomas Cook where the exchange rate makes your eyes water.
With a few rare exceptions (Cuba for Americans is one) Traveller's Cheques are so '80's... I'm kinda amused that banks even issue them anymore...
