The pass should be kept reasonably open even during winter. I would love to travel through there at this time. It would be spectacular.
From Santiago, you'll, of course, stop in Mendoza. After that, along this route, which I did last year, there is, regrettably no town that is worth anything more than a bed overnight on the way to BsAs. Not that Argentina doesn't have beautiful places to go, because it does. But there is nothing along this route. My advice is to pick a town about six hours from Mendoza, and stop there, if you don' want to one shot it. And get ready to leave again in the morning.

Something to bear in mind is that sometimes the bus route from Santiago de Chile -> Mendoza is closed due to snow over winter. This didn't happen to me but I was advised that the week before the pass was closed for about 2 days.
I found Mendoza to be a good crack. I stayed there for about 5 days in the end.

i would really love to see the iguaza falls as well. would you think it would be best to go there en route before reaching BA, or after, bearing in mind i will fly out of BA on my way to OZ.

You shouldn't have a problem with the mountain pass. but weather has been very unpredictable in Argentina lately. Who knows we might have allot fo snow in July! You can head from Chile to Mendoza which is the wine area of Argentina. Mendoza is allot of fun and you can do some wine tasting on bycicles. From mendoza you can head to Cordoba City which is in the middle of Argentina. You can spend a couple of days there and maybe go about 80kms from Cordoba to the Calamuchita Valley. There are some great places to hike. Please keep in mind that it is winter and not as beautiful as in summer but you will still be able to do all activities. You can visit a place called La Cumbrecita and do some extreme sport if you are interested. Drop me a mail and I will give you more details. From here you can take an overnight bus to Buenos Aires. The busses are very luxury and will cost you +- ARS 150.
