I'm interested in planning a trip to South Africa for some time next year or the year after (I'm already backpacking through Europe this summer, but I'd want to plan far in advance and start saving!)

lets see, I am from South Africa and I have been to most places , although I backpacked all the areas. I have been to vic falls on both the Zimbabwe & Zambia sides.
I gues from South Africa you can try to do the following:
1. From the airport try and see the tourist sites in Soweto (depending how adventurous you are, loads of tourist do this but some people might advise you against it. I think it will be a lovely experience as mentioned loads of people have done it and lived to tell the story).
2. You can then travel for the safari in the evening or next morning and spend a day or two there.
2. You can then Fly to Durban.. Hikking & the beach
3. You can fly to Cape Town ... climb Table mountain and enjoy the sea shore and the wine route
4. Fly into either Zambian / Zimbabwean side .. you will find packages for this from either Cape town or Durban. You can spend half / 1 day on the Zambian side & then other half on the Zimbabwean side with an option of bungy jumping. the Zambian and Zimbabwean sides are separetted by the boarder control of either side so it will take you less than 10 min to reach the other side. The view from both sides is amazing.. I think its one of the most beautiful spots I have seen. You can spend an evening at the Hwange??national game reserve.. you can camp and do safari there... beautiful area indeed.
5. You can also squeeze in Botswana for the desert experience... its only a 4-5 hrs from Johannesburg by road and I gues cheapper by domestic airlines..

6. You can also squeeze Mocambeque few hours from Johannesburg as well
7. Lake Tiganyika will be brilliant and travelling there from Lusaka wont be a problem.. if you have a month to do this I will advise you see all this places.. if only 2 weeks you can stick South Africa & Vic falls.....

How long you want to stay in South Africa will depend on what you want to see and do, I have lived here all my life and still have not seen everything there is to see in South AFrica.
The must see places will also depend on your interests. It is difficult to advise you on these without knowing if you want to see the normal tourist attractions of if you want to see and go places most tourists just miss because they do not know about it.
Putting an itinerary together for you would depend on your interests. eg. museums, battlefields, animals, history, nature etc.
