Sounds great. Not been to Skiathos but Skopelos is one of my favourite islands (that I've been to so far). It has a lovely whitewashed town built up into a hillside overlooking a dramatic harbour. It's not the best island for beaches, but I believe Skiathos will fulfil that requirement. Get your walking knees ready though, there are lots of steep steps and pathways, particularly around Skopelos town.

Athens is good for a couple of days of sightseeing. The ferry for Skopelos doesn't leave from the main Athens port of Pireaus, but from Agios Constantinos on the East coast - you need to get a bus from the main bus station, and it takes 2-3 hours to get there. Check out the ferry timetable first but there are plenty of boats on this route. Ferries between Skiathos and Skopelos are pretty frequent and don't take very long. Not sure how long you're planning on going for, I would personally allow 4 days for each of these islands. There isn't a tremendous amount to 'do' as such, apart from visiting lovely scenery, relaxing, and eating at little tavernas by the harbour but it sounds like that's what you're after so you should be OK.

When we went to Skopelos we rented a lovely cottage overlooking the next bay along from the next town. Renting a cottage can be a cost-effective way to stay. In Athens I have stayed in 3 hotels, none of which I would particularly recommend, so probably a good idea to ask someone else about that one!
