I am looking at traveling from Perth over to Gold Coast, going along the south coast. I will be stopping off and working and staying in various places along the way. I was wondering if I will be able to drive while I am out their on my UK license? Also, if anyone has any ideas on the best way to do my trip it would be much appreciated. Thanks.

This is not true. As long as your license is in English, you can drive without an "international driving permit" (note the name; this is as opposed to an "international drivers license" which is a scam). Besides planty's link, also see (for example) , the agency dealing with this in Victoria.
