Its very competitive everywhere for rural work in Oz. You will have an advantage if you have your own transport. I would advise you to contact all working hostels to get your name on a waiting list first. Another thing would be to network with other backpackers in hostels and see if you can obtain any numbers of farms! thats how I got my job!
Try to get it your regional work as soon as possible. It took my 5 months to get my 88 days in total so I just got it in time. Farmers can never guarantee you your days and weather has a huge impact on it.

Have a look on the Harvest Trail website, there'll be a list of job vacancies for things like vineyard work/fruit picking & packing/farm work etc. Theres various kinds of work going at all times of year, and as you've said you'd be flexible to travel to where the work is then you shouldn't have a problem finding something
