I'm looking for the same for my girlfriend and me. We want somewhere quiet and relaxing (not overrun with kids!!) with a bit of tradition and culture to explore and some nice beaches. I have been thinking about Santorini as it sounds like it has a lot to offer.
We basically want a relaxing break away from the booze-culture package holiday scene found on a lot of the Greek Islands.
I have been to Greece 7 times. It is an amazing country with beautiful scenery, good food, nice weather and great people.
My favorite island is definitely Kalymnos. It is a small island which is still not overrun by tourists. It is a perfect place for a relaxing holiday. You can read more about Kalymnos in the travel guide.

The hotel we stayed at was , it is a really nice hotel near the center of Pothia which is the main town of Kalymnos. It was a very familiar hotel operated by an elderly couple.
I found a really good deal posted on facebook the other day for Orion Hotel in Crete, Crete is lovely the resort is Rethymnon, there are some lovely beaches there. I am not sure when you were looking at going but i saw it on there for June and its all inclusive (so food and drinks..save you a fortune!) for about £350 each.
The company I believe was -snip-. Hope you get something, Greece is lovely .
I settled on Croatia in the end - fly out on Tuesday
