The subway system makes getting around easy and you don't need to bother about an Oyster card if you have the right money.
If in Kowloon, take the Star Ferry across to Hong Kong island and as you go through the walkway, before you reach the road on the right you'll see some bus stops on a side road. Take the 15C which drops you off at the tram to the top of Victoria Peak and buy a ticket all the way to the top. It's a great view if the weather is OK.
There are day and night markets about, including a bird and a (pet) fish market.
As to money, it's fairly cheap to live there, but lots and lots of things to buy. Pirate DVD's are generally of lousy quality.
It's presently the monsoon season so an umbrella is handy.

Hong Kong is a pretty expensive city to live in, but much of that is accommodation. If you have that taken care of, you can get by on a fairly low budget. Food and drinks in western style restaurants and bars can be expensive ($80-100 HKD for a main at the low end. 35-70 for a drink). But more local style restaurants are much cheaper (35ish for meal), and if you just want to get a quick meal, fast food places are pretty cheap. Subway for example is only $19 for a sub of the day. You can also go out for night pretty cheaply. You can drink on the street, so grab a drink at 7-11 for $10 or less, and head to the bar areas. You'll find just as many people drinking outside on the street as there are inside the bar.
The great thing about HK is that many of the best sites are free or really cheap.
Take the bus up to the peak (or the tram just one way). Don't pay to get in the sky tower (or whatever it's called). Instead, take the path that leads to the left of the tower, and walk around the peak for about 15 mins. It's free and the view is much much better than the tower.
Take a trip on the Star Ferry - it's only $3 or so, and you get great views.
Visit the TST promenade (Avenue of the Stars) at 8pm for a free light show
Take a bus to Stanley
Wander the many markets of Kowloon - night market, ladies market, goldfish, bird market
Take a walking tour of Shueng Wan which despite being right in the middle of the city, has pockets of traditional HK, like markets, little Chinese medicine stores, and Man Mo Temple.
Head to the beach in Repulse Bay or Shek-O.
Go from the bottom to the top of the Mid-Level's escalators.
The Botanical Gardens are free and a nice stroll (with monkeys to see).
So if you aren't going to do any shopping, and you are willing to eat as cheaply as possible, you can probably get by just on $200 a day or so, by just paying for public transport to get around to the free sites.
