If you tell your bank not to send you bank statements, the only thing they need an address for is to send you your debit card after you open your account. For that you can just use your hostel's address.
Australian banks (and employers) are used to dealing backpackers without a fixed address. Don't worry about it.

a) which bank is best for backpackers - I don't want to be charged for anything!!
b) how long it will take to get your Tax number sent out, tried to do it from the UK and they said you need to have entered the country and have a postal address...

I was thinking of going with the Commonwealth Bank since it seems it's the biggest bank in Australia. There's a small fee of 4$/month for unlimited transaction though.
No idea about point b). If someone know the answer, please enlighten us
By the way, when I you going to Australia? For my part, I plan on arriving in Sydney the first week of november.

This differs from year to year, as they initiate and close down different types of accounts. When I was there eight years ago, ANZ had an account without any fees (limited to 5 ATM withdrawals a month). Right now, I don't know. Check the websites of the big banks for details on their different types of accounts: ANZ, Westpac, NAB, Commonwealth.

Yeah, one of the requirements of the tax file number is indeed that you have to be in the country. Takes about a week; just have it sent to your hostel.
