I don't know how easy it would be to get a job or even an internship (un stage) in the heritage sector, and I won't even pretend to understand all the red tapes and bureaucratic system in place in France.
There is a body that is in charge of quite a number of national monuments throughout France, and when I searched their site, they have a - in French only - so perhaps you can have a look at it?
Otherwise, I suppose the alternative would be to contact the different museums directly or see if they have a recruitment page on their sites. (FYI, I can't seem to see one on the page of the Ministry of Culture.)

Another job database you might want to look at is which is run by the EU. It's basically aimed at trying to help Europeans find jobs in other European countries, ie. encourage free movement of workers.
