I recently got laid off and decided to backpack through Europe before returning to the real world of work. In addition to typical sightseeing I was also looking forward to doing some partying with other backpackers, but it seems that most people backpack during the spring and summer months. Can you still find a decent scene during december/january? The places that I would like to see in no particular order are: Spain, Morocco, Netherlands, France, Greece, Turkey.
Partying with other backpackers will be difficult, but you shouldn't have a problem finding locals to party with in the big cities.

Things will be very slow and quiet around the typical summer partying spots around the Med and in Morocco. If you want to party hit the big cities in Europe, places like Berlin, Prague, Budapest, Paris, Istanbul.
