I really enjoyed - a fascinating glimpse into what life used to be like in Edinburgh. The is also worth seeing.
You have to go on a ghost tour when you're there. The people who run them are real entertainers, the stories they tell are chilling to say the least & the places they take you... well... you won't forget them in a hurry!
Much of the old town is actually built on top of older buildings, which were sealed off during the Plague, and these guys will take you down into underground streets and stuff.
The one I went on was from outside the Tron Kirk, a church on the Royal Mile, and I thoroughly recommend it.

Maybe you could also go for a little walk up Arthur's Seat? On a good day you'll get a fantastic view for miles and it doesn't take very long to get up to the top from the carpark(I'd get a taxi!). On the way you could take in Holyrood Palace & the Holyrood Scottish Parliament building too.
If you walk along Princes Street then up into the old city and up the royal mile to the Castle, explore the castle, maybe take a look at the , visit Mark Kings Close and possibly the dungeon (which I don't know), stop off at a pub or cafe on Victoria Street or the Grassmarket then make your way up Cowgate to Arthur's Seat that sounds like a pretty decent day to me. If I had more time I'd probably go and have a look at Leith Docks, in particular .
