Hi, I'm going to go on a trip in Western Europe for about 3-4 weeks. I booked tickets from easyjet, ryanair, and trenitalia. They state that there is only 1 carry-on baggage allowed / person of dimension 56x45x25cm. That means I have to pack very tightly. I'm planning to bring my laptop and camera also. Is the laptop bag included as 1 carry-on baggage or I am allowed to bring another carry-on baggage + the laptop bag? I assume I can wash/ ask to wash my clothes at the hotels? Anyone traveled with these airlines / trains can share their experience would be greatly appreciated.

No, It is strictly one bag only. 10 kgs weight max.
If your laptop weights 3 kgs, your bag 1.5 kgs and your camera 0.5 kgs you will be left with 5 kgs of luggage. That is not a lot, so many people wear almost all their clothes on top of each other when they fly with Ryanair.
Finally: it is also 55 cm x 40 cm x 20 cm max. Bags that fit that requirement are the Lowe Alpine TT Carry-On 40, the Arc'teryx Blade 30 and the Tatonka Flightcase. The GoLite Jam Pack might also be a good choice.

Is it the same for easyjet and the trains in Italy or it's just ryanair? It's really hard to travel for 3-4 weeks with little clothes, especially for my girlfriend. We might need to pay for another bag but that would cost a lot going to different airports.
There are no limits on what you can take on trains except what you can carry. Easyjet and Ryanair have the strict rules on baggage and especially Ryanair is really tough on weight and size restrictions.
The size 55 cm x 40 cm x 20 cm max is ok, it makes roughly 40 liters total. This is the most common recommended size for trolleys and backpacks when you go travelling and plan on using public transport and staying at hotels/hostels.
40 liters is definitely large enough for 2-3 changes of clothing plus the one you wear and some additional stuff like towel, soap, etc. It is all you really need. You wear your stuff and after 7-14 days when everything is dirty you wash.
What is limiting is the max. weight of 10 kgs. It is especially bad because you want to take a laptop with you. Depending on what the laptops weighs it might eat up a lot of those allowed 10 kgs.
Tip: When you go shopping for bags take a long look at the weight of the bag itself. You do not want a bag that weighs over 2 kgs when it is empty.

their check-in bag policy is very weird. The total 8 pieces of check-in bags must not exceed 20kgs. So in other words, if you carry 8 separate pieces, you are only allowed on average 2.2kg / bag? that seems very odd. It's not 8 pieces each of max 20kgs, it's 20kgs for a total of up to 8 pieces. And I couldn't find the price for a check-in bag. I suppose it should be around 15-20e each way?
Easyjet is a bit more lenient, but since you need to limit your baggage to the smallest amount allowed during the duration of your trip you should stick to Ryanair when looking at restrictions.
For this reason I was quoting the Ryanair rules, not the Easyjet rules.
Ryanair allows one piece of checked luggage at 15 kgs. It is possible to pay for a second piece of checked luggage but even then the total weight of checked luggage may not exceed 15 kgs.

It will be difficult because there is a safety limit on 9-12 kgs for items that go in the overhead bin. Exact weight depends upon the airline. Items that are heavier must be placed under the seat.

Yes, it is 20 kgs max. The 8 pieces are made for people who check items that are bulky but not heavy or for people who have many small bags. Examples would be young couples with children who check strollers and large packs of diapers in addition to regular baggage as well as cycling tourists. Cyclists usually have up to 7 bags on their bike, but the combined weight of all these bags is rarely more than 20 kgs. The bike will then make the 8th piece of luggage.
If you check in online, then generally, if you bag doesn't look too heavy you will get through Ryanair's strict (very prickish) weight restrictions. If that fails, while standing in front of the official, put on lots of clothes, stick books in your pockets, stuff socks down your trousers, etc, until your bag is less than 10kg. There's nothing they can do about it and you get a sense of satisfaction at showing them how petty they are being.
