A week in Chiang Mai. Join a 3 day tour trekking tour, 1 day in the city (preferable during the weekend). They have the best night market in Asia during the weekend night (might be Sunday).
And zipline for a day...
If you are intending to utilise a 30 day visa in northern Thailand only then I would suggest 7-10 days in Chiang Mai, including 1 day visiting Doi Suthep, say 3-4 day trekking tour, 1 day trip elephant farm/river rafting, few days relaxing in CM, then visit Mae Hong Son, Pai, Chaing Mai, Chiang Khong and then enter Laos. Plenty of info on various websites regarding these destinations eg apart from Travellerspoint, see Tripadvisor, Virtual Tourist, Travelfish etc.
