September 2011, wow, you are early planner :-). Anyway, September means winter so for all activities it will be good to check with local tourism agencies or department of conservation what is possible.

In case you like adrenaline, queenstown is a good place to be, plenty of adrenaline stuff to do such as bungy jump, speedboating over river, parapente, rafting, etc. Furthermore there are plenty places where you can have helicopter rides, e.g. at franz josef or fox glacier.

If you are more looking for nature adrenaline, you have some absolutely great hikes in new zealand. The 'great walks' are to be found at the www.doc.govt.nz. For the great walks in general you have to book huts in advance. For other hikes you do not have to book huts in advance if you want to do several day tracks.
The abel tasman track (coastal track - could be 1 to several days, can be combined with kayaking), the milford track (fiordland track - both southern island - several days) and the tongariro crossing (vulcanoe - northern island - 1 day) are definitely the best tracks which are very different and show really the differences in the nature from NZ. I loved aswell the kepler track. You can also have a look at my NZ weblog for pictures.
Be aware that when you are staying in the huts, you have to bring your own food. For some tracks there is also another organisation where they serve you meals but this is rather expensive and I think in general a bit older people (who do not want to carry their own backpack).

The tourism agencies are very helpful in general, just as the department of conservation so I would definitely approach them as well.
