The Basic plan sounds good 6 weeks in NZ should allow you to see most things here are a couple of web sites to help your kiwi leg planning:

While in NZ I would hire a small car or camper and just go with the flow.
As for Asia overland
Head for either Singapore or K.L. in Malaysia and just use either surface or one of the budjet airlines to make your way up the peninsular into Thailand and beyond.
