Will be travelling to Europe in November, and need a Schengen Visa.

I've read that France is a bit nitpicky at the moment so Germany might be a better bet?
There is no indication where you are from and you are confusing with 'it doesn't matter which country I start my trip from' and then a 'letter from the employer'.
What is your intention?
If your purpose is only tourism for any amount of time up to 90 days in 180, most countries' citizens are granted automatic entry to the Schengen zone and there is no requirement for prior application, but you should be able to show funding and exit intention, if asked.
