It is doable. Of course, but if you need more specific comments you need to provide more specific info or ask more specific questions... For example what your interests are, how long you want to spend on each city, if you are interested to stop by other areas in between etc...

This plan is easily doable and I would suggest you do a lot more as you will be able to. But one thing I would suggest, no even tell you is not to stay in Shannon! Shannon is only an airport, it is a village and not a typical Irish one, it is one that was specifically built when the airport was. Unless your flight is very early then even stay in Limerick which is 20min away would be better.
If you stay a day or two in Belfast and then another two days in Dublin with the third day seeing something like Newgrange or Glendalough and then drive to Cork (less than 3hrs from Dublin city). The best part of Ireland is the entire west coast and by your plan it doesn’t look like you will see any of it. Cork city is a great spot but I am assuming you are flying from Shannon and what might be better would be to go to Galway city (best place to go out in in Ireland and 2.5hrs from Dublin) and then drive by the coast by the cliffs of Moher, Lahinch etc all the way to Limerick/Shannon in a day or two. If you were to go by the coast from Cork city it would be too much driving even though west Cork is just as nice. If you were able to cancel your accommodation in Cork this would be my recommendation so at least you get to see the Atlantic.
