Whatever you intend with 'interrail ticket' and wherever you are proposing to purchase this from, the answers to your queries will be in the terms and conditions of purchase or the company's faqs or somewhere within their website.

I suspect you are referring to a pass of some sort which in this day and age I will be surprised is 'the best option', but obviously I do not know what you intend as 'best' for you, (your travel style, duration of travel, whether your money matters and why you are solely focused on rail travel, for example).

With the interail pass I think you can just hop on and off trains but it doesn't include all train companies. It is just a few of the national ones in each country I think. Also, some countries such as Italy charge a compulsory reservation fee for the train. This can be up to 10 euros so make sure you check at the station.

Also, I would suggest going to Spain too. There are many beautiful places to visit such as Grenada, Seville, Murcia and obviously Barcelona and Madrid
