One step further: On ticketbus.com.mx I see the near-hourly buses if I search for dates in February. If I search for dates in March, they all disappear. Does that mean they're just not bookable yet? Or is it more the case of high season / low season?

Hi - we did Cancun, Valladolid, Tulum, Chetumal (and then to Caye Caulker) in stages in December, mainly using ADO coaches. They seemed to be pretty frequent in December - perhaps they are more likely to be posted on the timetables nearer the date of travel. For an idea about taxi fares, try the website which suggests the 5 hour 45 minute journey might be about 2000 peso (if you can get someone to take you!).

Are you going into Belize overland or catching a water taxi from Chetumal to Caye Caulker or Ambergris Caye?

We'll head onward overland. We'll either be picked up at the border, or taking a bus to Belize City to be picked up there, probably mostly depending on time of day.

Updating this now that I've done it, for any future travellers stumbling across it: The ticketbus website indeed only gets updated a couple of weeks in advance. There's frequent buses from Cancun to Chetumal (every two hours, roughly, though there's bigger gaps as well as peak times when there's a bus every hour), and you take a separate ADO bus from the airport to the Cancun bus station. (Was quite a trek around the terminal to the departure point for that bus, but at least we were able to buy a ticket for both buses while still inside.)
Once in Chetumal, buses into Belize leave from Nuevo Mercado (not the main bus station, but a short walk / taxi ride away) frequently (every 1-2 hours, depending on time of day, and if you want to go to Corozal/Orange Walk, or all the way to Belize City). You have to get out twice at the border, once to exit Mexico (hand in your card, pay departure fee), once (with all your luggage) to enter Belize (they ask about food, but at least for us did not bother checking the luggage); the conductor on the bus will point the way if you have any questions there. These buses are, like all Belizean buses, converted schoolbuses. Nonexistent leg space, very quiet until the border, but filling up rapidly beyond that, and air conditioning provided by the breeze through the open windows; but for all that (helped by the music) much more pleasant than ADO buses with their over-the-top air conditioning and horrible choice in movies.

The only direct bus from Cancun to Belize City is a night bus both ways. The alternative to get back during the daytime is also to get a bus from Belize to Chetumal (same frequency), ask to be dropped off opposite the main bus station (since that goes to Nuevo Mercado as well), and then an ADO bus onward. Could theoretically be done in one day for the entire distance, but I'd recommend not torturing yourself quite that much.
