90% of the casas in Cuba have zero internet presence so the ones that do have a huge advantage for being booked in advance. Except under special circumstances you will have no problems booking casas on the spot, simply have your casa owner phone ahead and make arrangements, this is a very normal procedure.
£100 plus a night?! I think you're confused about the money exchange between Sterling and CUC (Cuban Convertible Pesos.) The majority of casas cost between £17 - £24 per night. That's for the room, not per person. It's very affordable.
