Hey there!
2 weeks isn't very long, if you're wanting to go to Uluru as well as Sydney & Melbourne. With the activities you've listed, you could easily spend a week each in Sydney and Melbourne. Uluru is very remote, so I would reconsider, or otherwise you will need to drop a few of the sites you want to see in the cities.
Hi! I am going arrive to Melbourn 21.03 in the evening, 22 Melbourn 23 Melbourn 24 start early for GOR (or I could start 23, but prefer to have 2 days in Melbourn). in classic way by go down by the see. Then stay for a night smwhere, 25 GOR 12 ap and grampians NP, 26 day for saveren hill (I think it should be fun), 27 back to Melbourn area + maybe winery tour or... Philip island; 28 Melbourn or winery or Philip it's or smth else around Melbourn 29- go to Tasmania for 4-6 days. and then... Other part of the trip: east cost, Uluru, Sydney.
I am solo traveler and would be happy to meet travel companions.
