Greece is still relatively warm in December during the day, but can be quite chilly at night.
If you want guaranteed warm winter weather and lots of sunshine, then The Canary Islands will please you lots.
Easyjet do flights from the north and south of England to different islands and the fares are good, as long as you don't go right before the 25th (give or take a few days or so).
In Greece winters are rather warm, with temperatures averaging around 55° to 60 °F (13°-16 °C).

You can sometimes get even warmer weather than that along the Mediterranean Coast of Spain (i.e. East Coast). Around 20 degrees C sometimes. But you have to go to the very southern part of Spain for that. For example, near Valencia or a little bit further south, one year it was approximately 15 degrees during Christmas week, so if you go further south, you're likely to get even better.
However, if you want guaranteed sunshine, go for the Canary's or even northern Africa.

Yes usually the temperature onChristmass is 15 degrees but every year on December or January there a period called Alkyonides days when the temperature is over 20 and last 10 to 15 days.
