Just wing it. There are so many lower priced rooms in all four countries that you won't get shut out. Certainly not in July-August. You are going in 'low season' or 'rainy season', take your pick. Take along a LP guide book or do some research here on TP and you will have a list of place you might want to stay. Click on 'accommodation', left panel. Select 'country', pick a city, read what others have to say about that hotel/GH. Make your list.

or another option is that you can search hotels on tripadvisor, for budget one, you can click on B&B on that website. There are plenty of hotels which you can choose
I agree with Mike. We spent 3 months in those countries and never booked in advance.
I was be traveling to Cambodia in June and I was also thinking about booking hostels in advance or just winging it. I think I'll just wing it.
We never book any room in advance, despite good references on any website. We just enter the guesthouse, ask to see the room, and after a first impression we decide to take that room, or we try the one next door...

I agree with the others about not needing to book in advance. There are so many guesthouses and hotels that in the rare case that the place you want to stay is full there are hundreds of others to choose from. Also I always find it's better to see the place in person, rather than just looking at photos/descriptions on the Internet which sometimes can glorify places a bit more than the reality!
