Dubai is not Europe, and 8 hours should be plenty. If you are worried about the flight out of Milan being delayed, then I'd say 8 hours is still plenty. Chances are that if the flight is delayed by 8 hours, it might be delayed by a LOT more too (think volcanoes erupting etc.). Also, you'll be flying out of Italy which isn't nearly as bad weather prone as Northern Europe, although even here in the weather hasn't ever delayed my flights by much.
If you are booking the flights as part of the same ticket, if there is a delay for whatever reason, the airline will put you up and put you on the next flight.
