Your plans sounds great!! Interlaken is one of the most beautiful places in switzerland in my opinion. you can go paragliding there, this feeling of flying and the view from above is just breathtaking. Zermatt is wonderful. you can even go skiing there in summer on the glacier!
The Mt. Pilatus is near where I live and there's definitely no Matterhorn you'd be able to reach by hiking for 1.5 hours! you missunderstood a little thing: the Matterhorn is in Zermatt.
Just something else to notice: The train to Jungfraujoch is very expensive, don't know if you already heard that.
