Feb/March is the wet season up north in Australia (so around Cairns), which leads to strongly reduced visibility at the reef. Not the best time to be up there, alas. Consider maybe doing Melbourne and the Great Ocean Road instead, and saving the Great Barrier Reef for some other trip.

For the visa, as an Irish citizen you can get the for free. Just throwing that out there as there's still lots of wrong and outdated information talking about ETA and tourist visas.

As for hostels - my favorite one in Sydney is the - awesome rooftop area, and an amazing area of Sydney to stay in. It's starting to get a bit long in the tooth, though, with the kitchen urgently needing t be restocked, so might not be the best choice anymore. Consider for yourself how important such things are for you. (FWIW, loads of good bakeries and restaurants on Glebe Point Road!)

Thanks so much for all the suggestions. There is so much to do in Sydney so I think I will just have to explore that first...Might leave GBR for next time..I am sure there are some begginer's courses that I can do on a day trip around Sydney too...
