Hey, I am still confused by these rules of 90 day travel in Europe.
No, the 90 days is applicable for zones within Schengen as far as I know, not the whole of Europe (i.e. UK and Ireland don't implement Schengen and entry to Schengen zone does not automatically qualify entry to UK and Ireland).
Iceland, Norway and Switzerland are not Schengen states but they are implementing Schengen.
In short, all the countries you've visiting and plan to visit are Schengen-implementing countries. You've effectively overstayed what's permitted on your automatic tourist visa! I think you should consult the closest Australian embassy to you for advice and proper guidance, esp on the extended visa as right now, I'm not even sure with whom you should apply it with. Normally applications are dealt with by the authorities of the country that you'll be staying the longest throughout the trip.
In my opinion, risking it and playing dumb will not be a good idea, especially if you run into legal problems. Particularly since you're going to overstay by about another 90-100 days. To be labelled illegal immigrant and be deported will not be fun, and you will have problem travelling Europe in future.

I have heard of extended tourist visas but i am unsure of how to apply, how to do this?
This is possible in a handful of instances. One such instances is having an Australian passport and applying for an extension (= temporary residency permit) in Germany.
So i have spent a total of 100 days in finland and sweden, now i am in Iceland, no questions asked, where i will stay for 5 weeks and then fly into Copenhagen and make my way to Germany where i will stay until i fly home from london at the end of Jan.
If you have already overstayed in Schengen your best bet is to get your arse to London ASAP and then hang around the UK and Ireland until you fly home.
If you have not overstayed yet and are still within the initial 90 days I would recommend going to Germany and applying for a residency permit there.

If you are so eager to risk getting arrested by the police go ahead. In Germany we have a saying: Idiocy doesn't protect from punishment. So playing dumb won't protect you from trouble either.

Oh I did mean Schengen states. Afterall, being in the EU does not equate to being in Schengen, e.g. UK and Ireland.
It is of course, also correct in noting that those three countries are not in the EU. But for the visa purposes, Schengen is a more accurate reference point, imho.
