I'll definately recommend splitting it like you mentioned. A week is too much in Amsterdam, even 5 days is what most travellers will find a little too long.
I would even consider visiting 3 cities if you are into it.
Don't know regarding best route, sorry.
I would agree with 3 cities - you can probably see all you need to see in Bruges in 2 days.
I would recommend 3-4 days in A'dam, 2 days in Bruges and if you're passing through and have time - spend a couple of nights in Antwerpen (Antwerp), home of the finest bars and beers in the world (1000's of them) and a beautiful city too.
You will find train services and various routes much more flexible in Antwerp than in Ghent, although it has to be said out loud, Ghent is also a lovely place. You're spoilt for choice really, great planning of all the places you've suggested. They're all so good to see and be in.
Thanks guys, it seems we're going for 5 days altogether, we'll probably spend most of it in Amsterdam, Antwerp sounds nice as well, maybe Hague... Anybody knows good, not too expensive places to eat in Amsterdam?

I can't remember the names of any particular restaurants, but keep an eye out for argentinian steakhouses. They normally have lunch specials where you can get a decent sized steak, salad and fries (with the mayo of course) for about 6 euros. In my opinion you should check out the jordaan area in the southern part of amsterdam, as i found it to be cheaper than the center. Hope that helps.
No offense, but that's the worst culinary advice ever. Steak houses are cheap (although not thát cheap), but quality is appalling.
If you venture outside the city center, either to the West or East (or South, but only the Pijp area), you'll find that the city is littered with eateries that serve acceptable food at about €15 for a main course. If you want cheaper, try falafel (there's a good place at Mint Square in the center), Thai (in and around the red light district) or roti (everywhere outside the center).
If you happen to be in town on 4/26, 5/14 or 6/4, consider eating at . She normally opens up for groups, and price-quality ratio (€35 for a 4-course meal) is outstanding.
If you are going on your trip this month then you couldn't have timed a visit to Bruges more perfectly, as the annual chocolate festival takes place there in April. The world finest chocolatiers will be on hand with live demonstrations and chocolate sculptures and you will be transported to chocolate heaven. If you aren't going in April you will be pleased to hear the Belgian chocolate museum is open all year round.
