There are on the Perfume River, Hue. They will get you to the Royal Tombs. Or take a tour as I did. Photos in my gallery. Outside of Hoi An, there are the ruins. Boat ride option here as well. Once in Nha Trang you can rent motorbikes and explore on your own. My covers my day. There are outfits that will take you over the back roads to DaLat from NT. Or once in DaLat, go with the to get off the beaten path. Or rent your own bike. .
My blog covers . up to Siem Reap, or bus if you want to save money. Two days , one long day back to BKK . I would allow 6-7 days to get from HCM to BKK via land.

I think that if you're truly an independent traveler, then you also need to do all of the research and planning yourself, and not depend on strangers for so much input. You should be aware, if this is your first time in the region, that motorcycle travel in Vietnam is far from safe and also illegal if you don't hold a Vietnamese license.
Johnny makes a good point. Riding a motorbike (MB)in VN is not for the faint of heart. Read for some good advice. I rented MBs several times and never had a problem. But, it is illegal to ride w/o a VN driving license. We don't have one. If stopped by the police, you will need to pay the fine on the spot. If you have an accident, you will be at fault and will pay the damages. A pretty stacked deck against you. But, I would still rent and ride a MB if you have riding experience and want to get off the beaten path.

We do not hold a MB licence so I do not think we will be taking the risk of driving by our selves, but the Easy Rider option sounds interesting - how long does a trip from Da Lat to HCMC take?
We are wanting to get off the beaten path, but still it's our first time to SE Asia, so even though we want to be independent we can clearly benefit from all the expert advice we can get here
Could you please give us some advice on the trip from HCMC, through the Mekong Delta to Can Tho and to Phu Quoc Island before entering into Cambodia? How to smoothest enter Cambodia from Phu Quoc Island?
