Although not exactly mountainous, you might like the area in the triangle Oxford - Swindon - Reading. Beatiful countryside with some modest elevation and interesting early Roman defenses (ditches and dykes). You'd need a car, though.
I've also heard good stories about New Forest National Park near Southampton. This can be reached by train (Beaulieu Road and Brockenhurst train stations on the South western line from London), but I guess you'd still need a car to get around.
It's a train ride of 5+ hours from London to the mountains. There are a few little hills down south and some bumps in London, but if it's real mountains you want, you'll have to get to either Chester - then a local service to Bangor followed by a bus over to Snowdon, that'll take about 5 hours, or a train to Penrith - then a bus into the Lake District. Another trek of about 5 hours.

If you're on a budget, start checking train websites for rail tickets to the mountains in advance. If you buy a couple on the day, you'll be looking at around £150 - £200 for the pair of you and by the time you've added on B&B, it's going to be jolly expensive.
