As you are with your little infant, i would suggest you a reasonable and a better place which is more safer than any other place around.
1. Malaga Province (Costa del Sol), Axarquia (Costa del Sol), Comares Holiday apartments & villas
2. Torrevieja area, Torrevieja, San Luis Holiday apartments & villas
3. Scotland, Scottish Highlands & Islands, Northern Scottish Highlands Holiday apartments & villas

It would be easy for me to suggest if you have any particular place in mind. From my view Tuscany in Italy would be the great holiday place where you can find really nice separate villas and apartments.
