Check hostelworld.com, I have booked their hostels in Ireland and Belgium and they offer nice quality for the money (what I always do is book the cheapest one with a rating over 70%).
What a coincidence! I'm going there for the same amount of time in January, maybe we will meet there! Haha.

In Tel Aviv I stayed at Florentine Hostel, and it was absolutely great! Great location and lovely rooftop terrace! In Jerusalem I stayed at New Palm Hostel which is located just by Damascus gate by the old city! Cheap and friendly! Have a nice trip!
