Costa Rica and Panama are located in Central America, not South America.
I suggest that you start Googling ex-pat forums. The ex-pat forums will have the info you require regarding long-term residency, work visas, job possibilities, etc. - a travel forum like this one is (mostly) useless for those discussions.
Two questions: 1.) What skills do you have? Unless you can bring something to the table then it's always easier/cheaper for an employer to hire a local. 2.) How is your Spanish? Unless it's fairly good you can forget about a decent, high-paying "real" job and you'll have to accept grunt work at best - and that's NOT a good way to live long-term in a foreign country.
