Hi guys, my partner and I are planning a trip to North America-2013, Feb/March fly out from the UK.

Yeah, that's true, but if you spin it on it's head I have something great to focus on for saving and to look forward too!! We still might be slightly insane though!
If food is your thing, you cannot miss New York City boroughs!! Among all the amazing restaurants and cuisines, when I lived in Queens, going to Flushing for dumplings in hidden underground restaurants was a weekly ritual. If you're feeling adventurous, here's a great article in the NYTs (kinda old though) with interactive map on recommended spots.

I think you'd be better off asking one ? at a time - it can be overwhelming to answer so many!
Now, as to the subject of food (also my favorite):
Miami - try the Cuban food
Washington DC/Baltimore - best for Blue (lumpmeat) Crab
Philadelphia - submarine sandwich heaven (cold - Italian Hoagie, hot - Cheesesteak) and German/American (Pennsylvania Dutch) foods
New York - ethnic everything, but pastrami sandwiches, bagels, pizza are supreme (Italian/American heaven)
Boston/Maine - lobster is king
Seattle/Portland - salmon in the Pacific NW
San Francisco - good Italian in North Beach and Mission Burritos in Mission District
LA/San Diego - Mexican is king
(you should really go to New Orleans for Cajun food! Nawlins is our best food city)
It can really be difficult to find good food in the States due to the proliferation of fast food and chain restaurants everywhere - I suggest consulting for each and every location you travel to. is also a good reference. Good luck.
Tipping in non-fast food places - 15-18% expected
Motels/hotels - way overpriced in the States - try for good values

Chowhound and Roadfood look like great resources, thank-you Daawgon, perfect for us as we'll be able to keep up to date with closings and openings as we've quite a while to go before we start our trip- the internet really is a great tool!
I've heard very good things about the food in New Orleans, I think it's a given that we should visit, would hate to miss out on the tantalising treats it has to offer!
I''ll definitely consider posting individual requests, maybe per state, nearer the time of our trip.

So many places to visit so much food to try. What is your budget for dining?
In the Carolinas make sure to try the various forms of barbeque. Melvin's just outside of Charleston has some of the best Carolina style (mustard based), while North Carolina leans towards a vinegar based my favorites being either the Pit in Raleigh, or Parker's over in Wilson (if you weren't using public trans I'd stress go to this one).
Down in Georgia make sure to try true southern food at some place like Mrs Wilkes Dining room.
In the Chesapeake region there are tons of restaurants making great crab dishes.
If you want to offer some specific cities I'll offer some restaurant options based on my knowledge and your budget for food.

I agree, the Lump Meat Crab (or Blue Crab) is sensational - my mom used to make Deviled Crab casserole with Lump Crab, YUM!
I need to add Chinese food to my list for San Francisco and New York (both have major Chinatowns). The other large Chinatown is in Vancouver, BC.
(Asian food in general for SF - good Vietnamese, Thai and Indian too)
