Hi,
Very broad question, but I'll make a start just by head. For details about temps and precipitation you might check which, apart from forecasts up to 8 days, also has climate charts and you can also check averages for the time you are there, up to a period of 3 weeks.
Asia: depends of course, but in general South East Asia and als India are best visited from around November to February. After that, temps go up and from June the rains start. After the rains though everything is lush and green, so scenery might also be nicer after or even during rainy seasons, as in the dry season it gets hazy and the sky isn't as blue it is less lush and green maybe.
For China and Japan, I would say that April/May and late September to mid-November are the best: not cold or hot and not too much rain either.
Northern Asia: summer is best, apart from the mosquitos. Same for Central Asia. Himalayas is also best in spring and early fall weatherwise.
Australia and New Zealand: apart from the northern part of Australia, the best time is October till March, their summer months, though October can still be chilly in the most southern areas. In the north (including Cairns and Darwin), the dry season starts in April till October or so, though during the end it gets sticky and hot (the built-up season towards the monsoon season).
South America: well, the southern part from November till March for sure. But the Altiplano of Bolivia and Peru for examples are better from May till October because of the dry and clear weather. Northern South America is a bit more diffcult, as the Amazone region near Manaus for example has dry weather after May or so, while that's the season when the Caribbean coast towards Central America is starting the rainy season. Because of the mountain ranges and different coastal systems (dry Pacific, wet Caribbean), it's best to check that specifcally online per country or even region/city.

I will mainly be travelling SE Asia, still not sure where to go first, and if i should go to South America first or on my way home, At the moment I thought it would be best toleave Aus/NZ last as I will hoefully get a job there, decisions decisions lol.
Do you know when the rain season will end for SE asia, It would be nice to get there for end so I can enjoy the Scenary and then the good weather.

My best bet would be to travel there somewhere around November. The last decade or so, the pattern of rains and dry times are becoming more and more distinct, but from November onwards you won't be having the extreme downpours or even a few days on end of rain.

Hello HC 2012.
In South America i think the best time to travel is in the summer... first of all because o the national parties and cultural celebrations and second because the weather is much better. so i would say that you should go on december, january or february.
In Asia, from what i know, at least in China the weather is unsuportable at summer... you can't even breath well because of the heat, so i would try as Utrecht said to go on the same period of time... in November maybe.... september... i think is better...
In Australia i would say that the summer is great, because of the beaches and stuff... but if you don't like to much this, i'm again with Utrecht... October and December are great..
