Haven't done white water rafting near Moab, so can't help you there.
The Fiery Furnace trail is incredible--but you'll probably need to take the hike with a guide, since it's easy to get lost even though it's only about 2 miles long and goes in a loop.
If you want a bike trail, an easy one (flat), but fairly long (28 miles) is Gemini Bridges--which follows US 191--or if you want difficult, try the most famous mountain biking trail in the world--the Sliprock--about 12 miles long but all over solid rock formations.
