No. No. No. THis is the absolute worst possible option you could think of.
Openly saying that you overstayed your tourist visa because you have gotten a job offer!!! Are you crazy? Think how that sounds to an immigration officer!!!! You would not only be denied the work permit but also banned from entry (because you are an illigal immigrant who entered on a tourist visa); exactly the situation you want to avoid.
Get out of the Schengen Area ASAP. And pray that you do not get caught.

I was apparently grossly misinformed by an immigration consultant...
If I leave the territory via ryanair, which performs visa checks to determine if you're aloud to enter the destination country, will it be found out?? Or is it only if I try to re-enter that a flag will be raised?
It's the "re-entry" part that the immigration officers will grill you/ raise that flag. And, no offense, but ignorance is not an excuse....
