I think you will be hard pushed to find a hostel in Mumbai/India with a similar type of vibe to the ones in Europe. When I was there I found that travellers were a lot more independent and sparse. In Asian countries people generally go out to eat as it is so cheap, very few hostels will have cooking equipment.
On the up side, you might get asked to be an extra in a Bollywood movie!
