I really like "Air Sharing" for storing and viewing things like PDFs - it'll share its storage folder over Wi-Fi so you can save stuff onto your iPhone for later. Of course, iBooks is coming out for iPhone/iPod and looks like a really nice reader - still, no wi-fi sharing there so you'd need to sync from iTunes.
"Where To?" for finding local stuff (Supermarkets, cafes, etc)
"Trails" is quite cool for recording hikes and stuff, and for geo-tagging your photos afterwards (although it chews through the battery...)
"OffMaps" is a great app that saves Open Street Map maps so you can have a map even without a data connection
"iTranslate" is awesome if you have an Internet connection - it hooks into Google Translate, so you just type in what you want to say, and out comes the translation. Saved us quite a few times =) I think the paid version comes with audio too, so it'll speak it for you (although that feels a bit weirder that just bumbling through the pronunciation myself).

Just visit the App Store and select the Travel category. Look for the top apps and you will see the most downloaded and recommended apps there. Read the reviews too. They will help.
