When you get to Luang Namtha there is a trekking office ( sorry I don't recall the exact name of the place), where you can sign up for treks. I was with 1 other person when we went- and we joined onto a group with about 6 or 7 others.
If I recall correctly there are several different trek groups, almost every day, and it is quite easy to just sign up to add on to a forming group. Usually no need to plan very much in advance if you are a bit flexible on the exact day you start the trek.
We went on a 3 day trek and had a great time!
