I'd do the east coast, if you can start in Cairns and travel south I think you'll get the most out of it. You'll be able to do snorkelling, diving and skydiving around Cairns, you can go sailing and snorkelling at the Whitsundays and learn to surf in Byron Bay. You can visit attractions like Fraser Island and the Blue Mountains, and you should get to explore Sydney and possibly Melbourne if you make it that far south.
Arguably this is not experiencing the "real Oz" which to me is cattle farming, red dirt and isolation, but you can always do that next time you come.
