Hi,
Dont go into Israel as you will be rejected entry into Sudan. You need to get Sudan visa in Cairo.
There are lots of overlanders traveling from Cairo to Cape Town, so dont think you will be short on lifts. You will however need to get a ferry from Aswan Egypt into Wadi Halfa Sudan, then get the train through the desert (unless you meet someone on the ferry). Ethiopia, Kenya and Tanzania you should be fine. Sudan has elections coming up, so be careful.
