Two weeks will be a rushed trip down the east coast, you won't get much time to do much. If you just want to travel down the east coast without spending much time exploring then this would be ok, but if you want to explore the Cairns region, Whitsundays and Fraser Island then I'd try and add a couple of weeks to your travel time.
I don't know about Brisbane at Christmas, but if it's anything like Sydney most of the accomodation will be booked long in advance so you'll need to look into what's available as soon as possible.
Interesting topic, me and 3 friends will be doing this trip but in reverse order. We have 21 days(ish), any more than that and my buddy misses his flight home.
I did the east coast by car a few months ago. We did Whitsundays, Fraser Island and stopped at many locations up the coast and it took us over 5 weeks, even then we still felt rushed.
